Coconuts

What a miraculous thing coconuts are. It is one of the main divine gifts we have unlimited access to here. I’ll be forever grateful for the interaction and wisdom I’ve received from the coconut. Unlike most fruits, coconuts produce all year round. Specifically, they produce one rack per moon cycle (so you already know I’m obsessed). Another amazing thing about Coconuts is that they are several fruits in one. Depending on the stage it’s in. Each stage has a completely different set of flavors and textures.

Young green coconuts are for water yummy sweet and hydrating.

Middle-age coconuts are jelly gooey jam like – smooth and slippery. This stage is in between water and milk with less direction but so much space for creativity.

Mature coconuts are milky fatty creamy texture that is smooth And silky. Never for drinking though it’s pretty gross.

I find it a beautiful metaphor for our life cycles as humans. At different points we have totally different abilities and things to offer. A coconut could never fault itself for the age and circumstance that naturally occurs within their walls and neither should we. 

In honor of the coconut I thought I would share some real content (not just blabbering). And show you all how to make coconut milk – I had no idea this was the process when I’d opened a few cans from the store.

The brownish coconut is a mature coconut, beside it is a young coconut. to get to the nut, the husk must be removed which takes several plier stabs so the husk will pull away from the nut it’s protecting.
Once the husk is fully removed you get to the nut that needs to be cracked open with a machete. It is a very hard shell and usually takes a few tries to bust open fully.
Next, the coconut meat needs to be separated and pried apart from the shell. this is the most tedious and skillful part.
When the meat is completely separated from the the nut shell it is time to take it out of machete land and into the kitchen for processing.

Blended up with some water, the less water the more creamy.
Strain out the meat and shell bits
Bam now I’ve got coffee creamer for the week
